This Thai Red Curry is Amy's dad's favourite. It has finely cut vegetables; sautéed onions, broccoli, carrots, tofu and delightfully sweet butternut squash in an authentically spiced smooth coconut milk based curry sauce. Fragrant jasmine rice completes this meal that has no dairy and no wheat, and is absolutely delicious.
